Christmas is just around the corner and that also means baking time. For those who want to surprise their wife or girlfriend with cookies or have had enough of vanilla crescents, I have a recipe for Australian Anzac cookies below. Level of difficulty: suitable for men.
Originally I wanted to call this article “Baking Christmas cookies for dummies”, but then I decided to go for a nicer version. Shortly about my cooking skills: I like to swing the cooking spoon myself, but I use the oven almost exclusively to prepare frozen products like pizza, fish sticks or chips. Now that Christmas is only a few days away, I thought I’d find a simple cookie recipe and surprise friends and family. And lo and behold, my Anzac cookies are very popular. Here are some instructions on how to make delicious biscuits with a few simple steps.
Ingredients:
1 cup of oatmeal
1 cup of flour
1 cup of grated coconut
1 cup of sugar
120g butter
1 tablespoon honey
1 teaspoon baking powder
3-4 tablespoons of water
Preparation:
In the first step, pour the oat flakes, flour, grated coconut and sugar into a large bowl and mix everything together. Then heat the butter slowly in a saucepan at low heat and add the honey. In a small cup empty the baking powder and mix it with the water – don’t worry men, the fizzing is normal. Then mix the liquid into the butter as well. Now you have to take the liquid from the stove and empty it into the bowl. Now knead the “dough” properly. If it is a little bit too dry, you can add another sip of water.
Then form the dough into round biscuits of about 3cm and put them on a baking tray. Either you grease it or you do it like me and put a baking paper underneath. A tip for shaping the cookies: The dough sticks properly, so always make sure you dip your hands in water before you bake. Or you use 2 tablespoons and form the dough with them – as if you were making dumplings – and then bring it into a round shape on the baking tray.
Last but not least, you have to let the Anzac biscuits turn golden brown for about 20 minutes at 160°C. Then take the biscuits outside, let them cool down and they are ready. It doesn’t get much easier than this.
